Chef Ernesto has been an integral part of Café | Cortina since 2012, bringing a wealth of culinary expertise and a profound passion for fresh ingredients and innovative cooking. His culinary journey began at the age of 13 under the guidance of his Abuela, who instilled in him a deep appreciation for using fresh ingredients. Starting as a prep cook at 15, he honed his skills and pursued formal culinary training at Schoolcraft College. Later, he enrolled at the esteemed Culinary Institute of America in Hyde Park, New York, where he refined his techniques alongside some of the country’s top chefs.
Upon joining Café | Cortina, Chef Ernesto was drawn to the Tonon family's dedication to fresh, high-quality ingredients and exceptional dining experiences. As Chef de Cuisine, he has continuously elevated and diversified the restaurant's menu, blending traditional Italian flavors with innovative culinary techniques.
Beyond the kitchen, Chef Ernesto has revitalized and expanded Café | Cortina’s garden, originally established by the late Adriano Tonon. Since opening its doors in 1976, the garden has been a cornerstone of the restaurant’s 'Garden to Table' philosophy, and Chef Ernesto has carried on this tradition to the fullest. His commitment to family and tradition informs his cooking, ensuring that every dish reflects the restaurant’s legacy of excellence and culinary craftsmanship.
Outside of work, Chef Ernesto enjoys spending time with his wife, who he married at Café | Cortina, their two daughters, and their beloved dog. His dedication to his craft and his love for family and tradition continue to define his role at Café | Cortina, making him a cornerstone of its culinary success.
